Happy Birthday Matt! Today, we strolled the babies through Farmer’s Market. We picked up strawberries and rhubarb to make his favorite – Strawberry Rhubarb Pie.

Strawberry Rhubarb Pie
(Recipe In Process*)
 
Filling:
4 Cups Rhubarb (Chopped)
4 Cups Strawberries (Chopped)
3/4 Cup Granulated Sugar
1/2 Cup Brown Sugar
1/4 Cup Salted Butter (Cubed)
1/4 Cup Tapioca
1 Tablespoon Lemon Juice
2 Teaspoons Vanilla
1 Teaspoon Cinnamon
 
Crust:
* Coming soon!  I made an all-butter crust but am open to suggestions going forward! The dough didn’t hold together. I went with crumble topping – still delicious…  but… Help!
