Ford and Wyatt took their first trip to the Pumpkin Patch.

IMG_8256_2I was excited to learn about The Wonder Weeks recently. This research identifies and explores mental leaps a baby goes through at various ages. For example, between 221/2 and 261/2 weeks, a baby experiences the mental leap of ”Relationships”. ”One of the most significant relationships that your baby can now perceive [or is in the process of perceiving] is the distance between one thing and another.” Looking back, this makes me wonder if the babies were more aware of being up close to a pumpkin as opposed to viewing them from a distance. IMG_7809_2IMG_9390IMG_7764_2IMG_8410_2I made a Pumpkin Bundt Cake… It is a dense, not-too-sweet cake, perfect for brunch or gifting. The best part… it naturally looks like the top of a pumpkin!IMG_9002There really isn’t a need to glaze it. However, if you are a sweet tooth like me… whip up some frosting and enjoy! In all honesty, I ate about half of this cake today. Fortunately, the babies didn’t pass judgement as THEY TOO were eating all day long.IMG_9208

Recipe for Pumpkin Bundt Cake
Wet Ingredients:
1 Cup Brown Sugar
1 Cup Pumpkin Puree
1 Cup Vanilla or Plain Greek Yogurt
1/2 Cup Coconut Oil
2 Eggs
2 Teaspoons Vanilla
Dry Ingredients:
2 Cups All-purpose Flour
1 Cup Granulated Sugar
1 Tablespoon Pumpkin Pie Spice
2 Teaspoons Baking Soda
1 Teaspoon Baking Powder
1 Teaspoon Salt
Additional Ingredients:
Preheat oven to 350°. Grease and flour bundt cake pan. Mix Wet and Dry ingredients separately; combineFill cake pan. Bake 40 minutes (TIP: Remove once inserted knife comes out clean). Cool 30 minutes. Remove. Glaze with Pumpkin Cream Cheese Frosting (recipe below). Sprinkle top with Nutmeg.
Pumpkin Cream Cheese Frosting
2 Cups Powdered Sugar
8 Ounces Cream Cheese (Softened)
1/2 Cup Unsalted Butter (Softened)
1/4 Cup Pumpkin Puree
2 Tablespoons Milk or Cream 
Mix ingredients (Tip: Add additional sugar to thicken or milk or cream to thin.
